S’mores Brownie Bars

So, I mentioned last week that I had a potluck at work. It was sooo good. I wanted to bring something new. I found this recipe online at www.seriouseats.com There are a lot of amazing recipes on that site. Don’t go if you’re hungry…

Cause you will. Eat it all.  Or take it somewhere like I did, to keep you to one serving. I actually went back for more and it was gone. Phew.

Mix sugar, eggs, instant coffee, vanilla and salt. Add flour, baking powder and mix until incorporated. Then, pour your chocolate mixture in, stirring well. Pour over crust.

Bake for 25 to 30 minutes or until toothpick comes out with moist crumbs attached, not raw batter.

Top with mini marshmallows. I only had large ones and cut them in half.

It was totally and completely a sticky mess. Feel free to laugh.

Done?

Pop it in the broiler until puffy and lightly browned. Then, let cool in the pan for about an hour before cutting. I then used cling wrap to seal in the moisture. It kept everything soft and gooey.

And afreakingmazing.

I precut mine, so they’d be easier to get out of the pan. I used a metal turner and pressed down. The marshmallows stuck to the turner, but I gently shook it to un-attach it. I cut them into eight rectangles. That way, people could cut off a half a piece if they wanted or take a full piece. They were about 2×4 inches rectangle.

Please don’t mistake that statement to think that I am suggesting that a 2×2 is a decent serving. Only that sometimes there are dozens of desserts and you can have more if you take half servings. Potlucks are good like that.

Once I got to work, I just lifted the foil out of the pan and set it down on the buffet. It was easy to grab a piece then.

The crust is kinda salty, which is so yummy with the moist-gooey brownie middle. It’s way good. And yes, the melty marshmallows on top are like frosting on a cake. It just throws it over the top. Oooey gooey to the extreme.

Don’t resist the pull of the S’mores Brownie Bar. You need it.

The Recipe:

S’mores Brownie Bar (only very slightly adapted from Serious Easts)

1 cup graham cracker crumbs (about 10 full crackers)
1 1/2 sticks margerine, divided
1/2 cup plus 1 Tbl sugar
salt
1 cup chocolate chips
2 eggs
1 tsp instant coffee
1/4 cup unbleached all purpose flour
3/4 tsp baking powder
3 cups mini marshmallows
 
Foil and liberally spray 9×9 pan. Break up graham crackers in a ziploc bag, then mix in 4 Tbl margerine , 1 Tbl sugar and 1/4 tsp salt. Press into the pan.
Melt chocolate chips with 8 Tbl margerine in microwave, mixing every 20 seconds for 1-2 minutes until melted. Set aside. Mix together 1/2 sugar, eggs, instant coffee, vanilla and 1/8 tsp salt. Add flour, baking powder and mix until smooth.  Pour batter into pan, bake for 25-30 minutes at 350 until a toothpick comes out with moist crumbs attached and not raw batter. Top with marshmallows and put under broiler for 1-3 minutes until golden brown.
 
Let sit for at least an hour, then if not serving at that time, cover with cling wrap until serving. Pre cut with metal spatula into 8 rectangles. Take your time as it is gooey.
