Chocolate Chip Cookie Bars

So, it was my turn to make snacks for the girl’s Girl Scout meeting and honestly, I totally had my hands on a box of Nilla Wafers, when I realized duh I can make something. And since they’re a bunch of kids, I decided a big pan of chocolate chip cookie bars. And since they’re a bunch of girls, I decided they had to be topped with pink M&M’s.

We mixed up the bars the night before and let them sit overnight. Cookies are almost always better after refrigeration. They say it’s lets the flour absorb all the flavors completely.

Dunno, but they’re good.

When I got home from work, I popped them in the oven for 30 minutes and we were off. The fireman had mixed up grape Kool-Aid in a gallon jug and had a stack of cups in a baggie. So, I had the cookie bars in one hand (in a hot mitt) and the bag of drinks in the other.

The school is only a 2 minute drive from the house, so the bars were still very warm and the drink had ice in it. Suffice it to say, the kiddos were over the moon excited about it. I felt a little bad cause my boys at the house looked a little envious at the bars when they came out of the oven.

I think I need to make something soon for them.

When I got back to pick her up, there were exactly 2 bars left… yes, definitely need to make more sometime soon.

The Recipe:

Chocolate Chip Cookie Bars

2 sticks butter or crisco, softened
3/4 cup sugar
3/4 cup brown sugar
2 tsp vanilla
1 tsp salt
2 large eggs
1 tsp baking soda
2 1/4 cups whole wheat white flour
2 cups chocolate chips (plus a handful of other candies to top with like M&M’s)
 
Cream together, butter and sugars. Mix in vanilla, salt and eggs until well incorporated. Add in baking soda and flour in small batches until mixed in. Stir in the chips and press into a greased 9×13 pan. Top with M&M’s, nuts or other candies. Refrigerate for at least 2 hours or overnight.
 
Bake 25-30 minutes at 325 degrees or until lightly brown.
