Sausage, Egg & Cheddar Breakfast Burrito

Breakfast is the hardest time for me to eat healthy. I want to grab a bowl of cereal! It’s what I did for 15 or more years. Or oatmeal, or pancakes, or waffles. Breakfast was my carb heavy meal.

So, I’ve tried a few high protein breakfasts and I’ve only found two that I can successfully eat every day. So, that makes it a little difficult. I don’t like meat in the morning. So, I either make a protein shake with frozen berries, like a smoothie or my Sweet Fluffy Omelet. Seriously, every morning.

I’ve made frittatas and other egg dishes, but I just don’t enjoy them as much at breakfast as I do at other times of the day.

This burrito I can eat in the morning. I think it’s because it’s wrapped in a tortilla. But I did use a low carb tortilla, so I’m not feeling very guilty. Like, not at all.

And it was easy, too. I just broke up a turkey sausage patty in a skillet, heating it through. I actually buy bulk turkey sausage, form it into patties, cook them up and freeze between sheets of waxed paper. That way, you always have some available, just take out what you want and pop it in the microwave to defrost.

Then, whisk together a splash of milk and an egg and an egg white. You’re lowering the fat content with only 1 yolk.

Then, I turned added the egg to the meat in the skillet and topped with some shredded cheddar.

Let this sit a little while. If you mix it up too quickly, you’ll have tiny scrambled chunks. I was looking to keep it nice and fluffy. Push some of the egg off the bottom and scrape in, letting the egg fill in the space. It’ll fluff right up. Then, flip in chunks until cooked throughout.

Then, pour it out onto a warmed tortilla and top with additional cheese and/or salsa. You could also add a little salsa or green chilis in your egg mixture, but I was in the mood for a sausagey and cheesy mix.

Yum! I could eat this nearly every morning. I tell you what, I’m really relieved to have found another thing to make for breakfast. As much as I like my normal breakfast options, it’s nice to have something new in the rotation.

The Recipe:

Sausage, Egg & Cheddar Breakfast Burrito

1 turkey sausage patty (I used Jennie-O)
2 eggs, divided
2 Tbl milk
salt and pepper to taste
1/4 cup shredded cheddar cheese
1 tortilla (I used low carb)
 

Break the sausage patty up into bite sized pieces and warm in a medium-low skillet. Whisk together, 1 egg and 1 egg white with milk, salt and pepper. Pour milk over the sausage and top with cheese. Let it sit for a minute, then stir by scraping the bottom of the pan and letting it fill back in with the uncooked egg mixture. Once it gets stable, flip in chunks until cooked throughout.

Serve in a warmed tortilla and top with salsa or more cheese, if desired.

    I am so excited to have you make this for me when you come down!!!! 🙂 Sounds like an excellent breakfast! I would love it with the salsa. I have been putting salsa on almost all of my meat. I love the extra kick!

    I love buying these from Sonic. hehehehe

    I know it sounds weird…but I’ve never been able to make one that tastes as good as the Sonic ones. I don’t think I do the egg right. I’ll hafta try your tip about not mixing it up too soon.

    If you try it, let me know if it’s closer to Sonic’s burrito, I’m curious! I think the milk and the method makes the eggs fluffier. But they probably use an liquid egg product, so it may always taste different.
