Sausage, Egg & Cheddar Breakfast Burrito

Breakfast is the hardest time for me to eat healthy. I want to grab a bowl of cereal! It’s what I did for 15 or more years. Or oatmeal, or pancakes, or waffles. Breakfast was my carb heavy meal.

So, I’ve tried a few high protein breakfasts and I’ve only found two that I can successfully eat every day. So, that makes it a little difficult. I don’t like meat in the morning. So, I either make a protein shake with frozen berries, like a smoothie or my Sweet Fluffy Omelet. Seriously, every morning.

Cauliflower Rice

This isn’t really rice.

It’s really just cauliflower that’s been cut into bits so that the texture resembles rice.

Does it taste like rice? Not really.

General Tso’s Chicken

I know, I’m not remotely Asian. But wow is this good General Tso’s! I’ve tried making it a few times and after some tweaking, this will be the recipe marked ‘save’.  The fireman said that it tasted like Chinese Take-Out. So….score!

Last night, I made this for the family, but I also made one of those Sun-Bird packet seasonings of Bourbon Chicken. Have you ever used those? They’re really good, but I wanted to make General Tso’s from scratch. I really like cooking Chinese food. However, I wasn’t sure how it was going to turn out, and if it was a total fail, like my Oaty Garbanzo Bean Deep Dish Chocolate Chip Cookie Fail, then I wanted back-up.

Heavenly Chocolate Chip Cookie Pie

First of all, I’ve got to say that I’m so happy to have you all here! This is my first real post for my first real site with my first real name. Well, not that.
